6.3 Octomore 2011 1st Fill Bourbon Barrel, 10 years old, 63.7%
Peated to a whopping 156PPM the maturation took place in a 1st fill bourbon cask from Jim Beam.
Bottled in February 2023 as Release 6.3 of the Jim McEwan Signature Collection, like all bottlings within the collection, it was bottled un-chill filtered, with no added colour, and at natural cask strength of 63.7% (as we always say, Jim would have it no other way!), it yielded only 226 bottles.

Colour - Light Amber Gold
Aroma - Opens on a stormy November day walking on the West Coast with waves that are gigantic blowing in from the West, then the sweetness of the barley sugar comes forward in harmony with the spicy sweetness from the bourbon soaked staves on its 1st fill. The peat smoke and the spice, plus its maturation a stones throw from the Atlantic Ocean create a truly spiritual olfactory experience.
Palate - Like no other single malt, its smoky but there is much more to be discovered with a dash of water & time to let it settle, you will be rewarded with a unique tasting experience! The oak, the smoke, the sweetness of the barley, the traditional art of Pot Still distillation, the generations of Islay distillers and the maturation by the Atlantic Ocean create the highest peated single malt in Scotland in a Distillery built in 1881. This is IT, the DNA is 100%!
