Colour - Brilliant Amber Honey Combination
Aromas & Flavours - It’s classic South Islay. Lots of peat smoke, Heather in bloom, Atlantic overtures, warm sands, strong spirits and long finishes. You get that phenolic DNA throughout and that works beautifully with the crisp sweetness of the barley.
At this age it’s in its prime. The mellowness of the oak while it’s spicy DNA from its bourbon days lingers on the edges giving a spicy halo to the spirit and it works superbly with the phenol smokiness. But it’s not all smoke & oak, the crisp sweetness of the barley sugars bring balance & a contrast of flavours on the palate.
The finish which is long lasting and satisfying is clearly of the Islay character, no mistaking that!
Throughout you will detect light fruity overtures and also some floral notes courtesy of the yeasts used in the fermentation stage of distillation.
